【What is Tobingakoi?】

Tobingakoi is a production method where, during the filtration of moromi (fermenting mash), no pressure is applied with cloth. Instead, only the droplets that naturally fall are collected into tobin (1 to = 18L) bottles. Since it is not pressed, it results in an extremely pure flavor without any off-flavors. As the amount that can be extracted from one batch of sake is extremely small, it is highly rare and a special existence among premium sakes.
