MATCHA 抹茶

Matcha is a powdered green tea that originated in Japan, with a history that goes back to the 16th century. It is characterized by shade cultivation of tea plants (covered cultivation), a practice that began in Japan's Muromachi period, and by a processing method in which harvested tea leaves are not rolled. Growing the plants in the shade produces the vivid green color typical of matcha and increases amino acids such as theanine—sources of umami—enhancing its flavor. The typical way to drink it is to whisk matcha and hot water with a dedicated tool called a chasen, and it is especially served in the tea ceremony.
