Manazuru Sake Brewery
A long-established brewery in Echizen Ono, a small Kyoto in the Hokuriku region, that has been in business since the Horeki era (mid-Edo period). Echizen Ono is located in the upper reaches of the Kuzuryu River. It is a fan-shaped basin surrounded by 1,000m-class mountains on all sides and is rich in water and greenery. Combined with the clear water of Oshozu and the cold and snowy climate, it is a wonderful place that is said to be "a land created by the gods for sake brewing." Although it is a small brewery that does not rely on machines and makes all of its products by hand, it specializes in high-quality sake that meets the ginjo standard for all products.
